Banyan Tree Vabbinfaru to host Southern Thailand culinary collaboration at Saffron

Banyan Tree Vabbinfaru will host Chef Tipa, Head of Saffron at Banyan Group, for a Southern Thailand culinary collaboration from 17 June to 17 July. The limited-time menu at Saffron will feature dishes such as Gai Yang Kor Lae and Gaeng Kiew Wan Nua, highlighting Southern Thai flavours through contemporary techniques. Chef Tipa will also lead Thai cooking classes, reflecting the growing focus on chef residencies and experiential dining in the Maldives.

NH Collection Maldives Reethi Resort has launched Caravela, a maritime-inspired tasting experience blending Spanish culinary heritage with Maldivian ingredients. The inaugural five-course menu, The Atlantic Voyage of 1487, features dishes including Maldivian tuna with escabeche, local job fish, and 12-hour sous vide pork belly. Developed by Resort Manager and Master Sommelier Melroy Fernandes with the culinary team, the concept combines storytelling, wine pairing and experiential gastronomy.

Chef Omar Allibhoy headlines Kandima Maldives Eid culinary celebrations

Kandima Maldives will celebrate Eid ul Adha from 25 to 28 May with Maldivian dining, cultural performances and a special collaboration with Omar Allibhoy. Highlights include Maldivian breakfast classics, an Eid BBQ, Baklava and Spanish Latte pairings, and a Spanish-Maldivian fusion dish at Azure. The resort will also unveil its renovated Fresh Labs hydroponic growing space focused on local ingredient sourcing and garden-to-table experiences.
